The most complete Ming city wall in China: six kilometers of rammed earth and brick, 72 watchtowers, and rooftop views over an entire walled town of grey courtyards — the reason Pingyao is a UNESCO site rather than a museum piece.
Tip: Walk the quieter southern and western stretches; most visitors only climb at Yingxun Gate and turn back after 200 meters.

Shanxi's most famous cold cut: beef slow-braised with salt and spice until it slices like ham — dense, rosy, and deeply savory.
