Shanghai's signature view: a colonial-era waterfront promenade staring across the Huangpu River at the futuristic Pudong skyline — the Oriental Pearl Tower, the bottle-opener World Financial Center, and the twisting Shanghai Tower. Come at dusk to catch both the daylight and the light show.

Tip: Walk the Bund from north to south around sunset, then take the ferry or metro across to see Pudong up close.

Also worth the time: Shanghai Tower Observation Deck.

Eat: Xiaolongbao

Humble Administrator's Garden

The largest and most celebrated of Suzhou's classical gardens, and a UNESCO World Heritage Site — ponds, covered corridors, and pavilions arranged to unfold a new view at every turn. Considered by many the finest garden in southern China.

Tip: Slow down — the garden is designed to be walked, not photographed in one loop. Budget at least 2 hours.

Eat: Squirrel Mandarin Fish

A whole mandarin fish, deboned and scored, deep-fried until the cuts curl open like a squirrel's fur, then doused in hot sweet-and-sour sauce that makes it sizzle at the table. Invented at Songhelou for a Qianlong-era imperial visit. Songhelou (松鹤楼), the restaurant that invented the dish, on Guanqian Street.
