Tip: Dali Railway Station is in Xiaguan, not at the old town. Allow roughly 45-60 minutes between them in normal traffic.

Fresh Bai cow's-milk cheese stretched into thin sheets, dried, then grilled or fried. The crisp version is often served with rose jam; ask for less sugar if you want to taste the milk rather than the topping. Griddles in Xizhou or Dali Old Town; order one first because quality drops once it sits.

Humble Administrator's Garden
The largest and most celebrated of Suzhou's classical gardens, and a UNESCO World Heritage Site — ponds, covered corridors, and pavilions arranged to unfold a new view at every turn. Considered by many the finest garden in southern China.
Tip: Slow down — the garden is designed to be walked, not photographed in one loop. Budget at least 2 hours.

Eat: Squirrel Mandarin Fish
A whole mandarin fish, deboned and scored, deep-fried until the cuts curl open like a squirrel's fur, then doused in hot sweet-and-sour sauce that makes it sizzle at the table.
